Chicken breast alone is rich in protein but low in fat, but it is a very versatile protein that is easy and quick to cook so we really want to include it in our calendar.
Here, we have paired the chicken breasts with the lawyers to get the fat macro balance that we need.
- 12 oz Chicken Breast cut into cubes
- 4 cups Chicken Broth
- 1 1/2 Lawyers
- 1 The lime juiced
- 1 average The onion finely chopped
- 4 cloves Garlic
- 1 great Tomato chopped
- 4 tbsp Grass-fed Butter
- Salt & Black Pepper
- Mexican Seasoning
Heat the butter in a soup pot over medium heat, add onion, saute until soft, add the garlic and sauté for 30 seconds.
Sprinkle the chicken breasts with a teaspoon each of salt and pepper, add to the pan and brown.
Add the broth, seasonings, tomato and lemon juice, cover and cook on low fire for 20 minutes.
Add half a smash of avocado per serving when you are ready to eat.
