Simple, tasty, filling steak is paired with the sweet potato for a great meal that will leave you happy and well fed.
The ribeye is a pretty fatty cut of meat that is easy and fast to cook and enjoy.
Even if sweet potatoes are rich in carbohydrates and should generally be avoided, this recipe calls for 2 small sweet potatoes with a total net carbs of 7.67 g per serving.
- 15 oz Sirloin Steak
- 2 cloves Garlic grated
- 2 small Sweet Potatoes
- 6 tbsp Butter
- Salt & Black Pepper
- Extra Virgin Olive Oil
Preheat the oven to 400 degrees, coat a frying pan with olive oil, cut sweet potato into 1/2” thick disks, sprinkle with salt, place on a baking dish and sprinkle a little oil on top and bake in the oven for 25 minutes.
Melt the butter in a small saucepan, add the garlic and cook for one minute, set aside.
Pat steak dry, and sprinkle with 1/2 teaspoon of salt and a 1/2 tsp of black pepper.
Heat 2-4 tbsp olive oil to medium heat, add the steak, cook for three minutes and then flip and cook another three minutes for medium-rare.
Cut the beef in slices, in bites and place them in containers with sweet potatoes with garlic and butter drizzle at the top.
